Cooking for two is a challenge, since most of my recipes are for a large group or family meal.
We went to the local produce market the other day. They had good looking eggplant. Eggplant makes a large amount if you bread it and fry it to make eggplant Parmesan. I tried a simple recipe where you roast the eggplant with olive oil (garlic oil or oregano oil is better) for 15 mins, then cover with marinara with sautéed onions and red peppers and grated cheese and roast for 10 mins. Since I had a smaller eggplant it was perfect for 2. I made cucumbers with zucchini dip to go with it.

I enjoy cooking and people gathered around a table. People are the most important part of life. It is not things.
